Varietal composition: 100% Cinsaut.

 

Harvest: The variety are harvest mid to late September.

 

Vinification: Immediately after harvesting and destemming the must is placed in refrigerated stainless steel tanks at temperatures between 8th and 10th °C, where it remains for some hours (usually 6 to 12) for the extraction of the red pigments. Then the pomace is separated from the must which is carried in refrigerated stainless steel tanks.

Flavour Profile: Characteristic of this variety is its very strong aftertaste.

Matching: It combines well with dishes of moderate aromas that make up the everyday Greek household cuisine.
